Breakfast is my favorite meal of the day. There is nothing like starting a fresh day out right with a delicious meal. When I joined Weight Watchers, I thought I had to give up a lot of my favorite yummy breakfast foods. But it turns out that I just had to tweak them a bit, like these 2 point Breakfast Veggie Rings. Can you believe that blueberry pancakes can be only one point each?! Well, it is possible! These One Point Weight Watchers Blueberry Pancakes are proof that you can still eat delicious food. Syrup is extra, of course. 😉

Ingredients
- 1/2 C rolled oats
- 1 tsp baking powder
- 1 5-6 oz container of Blueberry Greek Nonfat Yogurt
- 1/2 ripe banana
- 1 large egg
- 1/2 tsp vanilla extract
- 1/3 C fresh blueberries
Instructions
- In a blender, combine oats, baking powder, yogurt, banana, egg, and vanilla extract and pulse until smooth.
- Let sit 5-10 minutes to thicken.
