EASY 3-INGREDIENT LEMON MOUSSE RECIPE
Creamy comfort desserts are the best. When those creamy comfort desserts are incredibly easy? Well ... that's even better. And truly, with just three simple ingredients, this Lemon Mousse recipe couldn't be any easier.
All it takes to whip up this fluffy Lemon Mousse is ... 1. Whipping cream ... 2. Sugar.
And I bet you can guess what you do with that whipping cream and sugar, can't you? That's right! ~ Make whipped cream. {you're so smart}
And then ... 3. Stir in a little lemon curd.
Look for prepared lemon curd with the jellies and jams in your grocery store ... Or, you can make your own homemade lemon curd. Sometimes I make my own, sometimes I buy it ... it just depends on how much time I have. Got a little available time floating around? ... I make my own. Want to whip up this 3-ingredient Lemon Mousse recipe extra fast? ... I grab a jar from the store.
Once prepared, spoon the Lemon Mousse mixture into individual serving dishes ... top with raspberries, a shortbread cookie, and perhaps a little dollop of more lemon curd if you'd like ... and get ready to enjoy fluffy lemony goodness.
Ingredients
1 c. whipping cream or heavy cream
1/4 c. granulated sugar
1 c. lemon curd {homemade or store bought}
raspberries & shortbread cookies, for garnish {optional}
Directions
Chill a large mixing bowl and the beaters of an electric mixer (or whisk attachment of a stand mixer) in the refrigerator for about 15 minutes. Remove from the refrigerator and pour the whipping cream into the chilled bowl. Beat on high speed for one minute. Add sugar and continue to beat on high speed until soft peaks form.
Gently fold in lemon curd, 1/3 cup at a time, until well blended.
