DELICIOUS SWEET POTATO CASSEROLE RECIPE

I'm suddenly finding myself BEHIND! But...only because I've been paying more attention to the important things. Those cute little important things are at their Auntie's house for a few hours, so here is my attempt at no longer being behind. And yes, I am posting somewhat unseasonably, but I promise that Christmas baking goodies are next on my list!

I brought this Sweet Potato Casserole to Thanksgiving dinner and it got RAVE reviews. It is always a little bit odd seeing marshmallows atop a side dish, but ohhhhh goodness I QUICKLY forgot those qualms when I took my first bite.


I have a heaping pile of cleaning to catch up on before my cuties come back, so I'm making this a quick one. Enjoy! Have a wonderful weekend!

Here are a few more delicious Thanksgiving sides for you and your family to enjoy! Green Bean Casserole, Creamy Crockpot Corn, Crockpot Stuffing and Cranberries

INGREDIENTS:

  • 5 lbs sweet potatoes, peeled and cut into chunks
  • 2 eggs
  • 1/2 cup (1 stick) butter, melted
  • 1/2 cup milk
  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 1 cup chopped pecans
  • 1/4 cup butter, melted
  • 5 cups miniature marshmallows

INSTRUCTIONS:

  1. Fill a large saucepan halfway with water and bring to a boil over high heat. Add sweet potato chunks and boil for 20 minutes, or until a fork easily goes through the centers of the potatoes. Drain and mash. Preheat oven to 350 degrees F and coat a 9x13 pan with cooking spray; set aside.
  2. Add the eggs, 1/2 cup butter, milk, 1/2 cup brown sugar and pumpkin pie spice to the mashed potatoes. Mix well and pour into prepared baking dish, spreading into an even layer.
