White Christmas Margarita

I love my margaritas all year long, Carrot Margaritas for spring, Watermelon Margaritas for summer and Apple Cider Margaritas for  fall, but today I wanted to make one a little more wintery to help me get in the Christmas spirit way down here in sunny Florida. And, being a Floridian, we have plenty of cocktails centered around coconut cream and cranberry juice so it seemed like a no-brainer to add them to what I call my White Christmas Margarita.

Now, somehow I had to try to keep this drink on the white side, since I was bound and determined to call this a White Christmas Margarita, so using regular cranberry juice just wasn’t going to work. But guess what I found? They actually make a white cranberry juice! Woohoo! Perfect solution!



I must have made at least 3 or 4 different batches (wheeeee!) yup, I had to try them all, until I got just the right quantities of every ingredient to make it taste fantastically tropical & delicious. It’s basically a standard margarita with the addition of white cranberry juice, coconut cream and, if you like (which I like) coconut rum too.

Now, if you want to make it look as festive as possible just whip up some holiday ice cubes too. Drop 3 pomegranate arils (I like them because they’re smaller than cranberries and you can eat them as well) and a small sprig of rosemary in each cavity of an ice cube try. Fill with water and freeze. That’s it! I also like to rim the glasses with a combination of coconut flakes and coarse salt which I put through my coffee grinder to make the coconut flakes finer. Now doesn’t that margarita just look deliciously tropical and Christmassy all at the same time?

Ingredients

  • 1/2 cup tequila
  • 1/2 cup white cranberry juice
  • 1/4 cup lime juice
  • 1/4 cup Cointreau (you could also use Grand Marnier or Triple Sec)
  • 2+ Tablespoons agave nectar (depending on sweetness desired)
  • 2 Tablespoons coconut cream
  • 1/4 cup coconut rum (optional)
  • Garnish: coconut flakes, coarse salt, lime slices

Directions

  1. In a large shaker, combine all ingredients. Shake well.
  2. Grind coconut flakes and salt so they are a little finer. Place on flat plate.
