STRAWBERRY BANANA CUPCAKES

Aren’t these strawberry banana cupcakes pretty? When I’m asked to bring food to a school party or a friend’s get together, I tend to go with a dessert, and cupcakes are such an easy recipe! I don’t need to worry about spoons or forks, which makes things even easier. These cupcakes work for any party!


Cupcake Ingredients:

  • 1/3 C strawberry preserves
  • 2 1/3 cups all purpose flour
  • 1 3/4 cups sugar
  • 3 1/2 tsp baking powder
  • 1 1/2 sticks unsalted butter, room temp
  • 2 eggs
  • 2 eggs whites
  • 1 tsp vanilla
  • Pink gel food coloring

Frosting Ingredients:

  • 1 C soft unsalted butter
  • 4 + C powdered sugar
  • 4 TBSP heavy whipping cream
  • 1 tsp banana flavoring
  • Fresh bananas
  • Strawberry preserves

Cupcake Directions:

  1. Preheat oven to 350 degrees. Line cupcake pan with paper liners.
  2. Beat the egg whites on high speed until soft peaks form about 2-3 minutes.  Set aside.
  3. Whisk together the flour, cornstarch, baking powder and salt.
  4. Beat butter on high speed until smooth and creamy about one minute.
  5. Add the sugar beating on high until the butter and sugar are creamed together. (3-4 minutes)
  6. Beat on medium-high speed while adding in the egg yolk and vanilla.
