APPLESAUCE BRAN MUFFINS

It can be quite the trick when looking for a decent half-way healthy muffin. Many recipes substitute bananas or peanut butter which works great if you want a peanut butter and banana flavored muffin. These flavors are super strong. Applesauce, on the other hand, it quite subtle and can go great with almost anything! This recipe does have flour and some sugar so we won’t call it healthy but it is definitely healthier.



I love bran muffins for super busy mornings that call for very few dishes and breakfast prep. It’s all too easy to hand the kids a pop tart and call it good. Bran muffins freeze really well and heat up in a pinch. I pair it with a little bit of fruit and-viola! A well rounded breakfast. And my kids LOVE it.

NGREDIENTS

  • 1 1/2 cup bran cereal or bran
  • 1 cup flour
  • 1 tsp  baking powder
  • 1 tsp baking soda
  • 1  cup milk or milk alternative I use almond milk
  • 1/3 cup applesauce
  • 1/3 cup honey
  • 1 egg
  • 1 tsp vanilla
  • bran muffins in tin

INSTRUCTIONS

  1. Preheat oven to 375
  2. Prepare a muffin tin with muffin liners or grease and flour
  3. In a medium size bowl crush the bran cereal until it resembles sand. I just use my hands and smash it between my fingers
